Today lavender is enjoying a resurgence of favour as a modern gourmet delight. Lavender is a member of the mint family and is close to rosemary, sage, and thyme. Organically grown Lavendula angustifolia is the most satisfactory lavender to use as the flavour is softly sweet with lemon and citrus notes. Other more camphorous lavenders are bitter and unpalatable.
