Today lavender is enjoying a resurgence of favour as a modern gourmet delight. Lavender is a member of the mint family and is close to rosemary, sage, and thyme.  Organically grown Lavendula angustifolia is the most satisfactory lavender to use as the flavour is softly sweet with lemon and citrus notes.  Other more camphorous lavenders are bitter and unpalatable.

Lavender has been used as a culinary herb for centuries and is still popular today, adding delicate flavour to many dishes both sweet and savoury. Elizabeth 1 is reported to have taken a ‘lavender tisane’ or tea and enjoyed a conserve type of jam made with lavender and rose petals.

Used medicinally, lavender tea will help to settle upset stomachs, relieve flatulence, sweeten the breath, calm anxiety and aid relaxation.
